Golden and crispy fried calamari is a main dish that everyone loves. Today we want to tantalize your taste buds with a variant that has fresh and exotic notes, created for us by Chef Felice Lo Basso: lime fried calamari. The chef reveals the secrets to a dry and fragrant fry, as tradition dictates, flavored with lime zest that will give a very aromatic touch. To accompany these delicious rings of calamari, there is a sweet and sour sauce with a spicy taste that will make this dish even more enticing. All you have to do is discover all the secrets for a perfect fry!
To prepare the lime fried calamari, pour the apple cider vinegar, wine 1, honey 2, and soy sauce 3 into a saucepan.
Add the tomato paste 4, juniper berries, cloves 5, and bay leaves 6.
Bring all the ingredients to the stove 7 and let them reduce by a quarter for about an hour. Strain the resulting sauce through a sieve 8 and set aside 9.
Now clean the squid: rinse them under running water 10, detach the head and eviscerate them 11. Also, remove the internal bone 12 and the skin.
Cut the tentacles 13 and remove the eyes 13. Once the squid is cleaned 14, cut the body into strips 15.
Let them dry on a tea towel 16. In a bowl, mix flour and semolina 17. Flour the squid 18.
Lay them on a tray 19, meanwhile heat the oil for frying, immerse the squid 20 and fry until golden 21.
Drain on paper towels and salt 22, finally flavor with grated lime 23 and black pepper. Serve the lime fried calamari with the sweet and sour sauce 24.
