How to prepare Fried Artichokes in Batter

To make fried artichokes in batter, the first step is to clean the artichokes: remove the stem 1 and the tougher outer leaves 2, then cut off the tips 3.

Trim the base with a small knife 4, then cut the artichoke in half 5 and scrape away the central choke 6.

Finally, cut the artichokes further into quarters 7 and immerse them in a bowl with water and lemon to prevent them from browning 8. Set the artichokes aside 9 and move on to the sauce.

Pour the ketchup into a small bowl, add a few drops of tabasco 10 and the chopped chives 11, then mix everything together 12.

Now prepare the batter: in a large bowl, place the egg yolk 13, the instant yeast 14, and the flour 15.

Pour in the red beer while stirring with a hand whisk 16 to achieve a smooth batter without lumps. Finally, add the salt 17 and mix again 18.

At this point, drain the artichokes from the acidulated water 19 and dry them well with a clean kitchen towel 20, then gently spread the leaves 21.

Heat the seed oil in a saucepan to a temperature of 320°F. Coat the artichokes with the batter, letting the excess drip off, then immerse a few wedges at a time into the hot oil 23 and fry for about 5 minutes 24.
