Preparation

How to prepare Cheese Balls

To prepare the cheese balls, remove the crust from the cheeses 1 and grate them with a fine-grated grater 2 3. Set the cheeses aside and move on to the bread.

Remove the crust from the bread 4 and cut the crumb into cubes 5, then blend with a mixer 6.

Once you have crumbs 7, mix them with the cheeses 8 and flavor with thyme 9.

Salt 10, pepper, and finally add the eggs 11. Knead with your hands until you get a fairly compact mixture 12.

Form balls weighing about 0.7 oz each 13. With these quantities, you will get 36 balls 14. Now fry in hot oil at 340°F 15. Fry a few balls at a time as they tend to stick together during cooking, and the temperature would drop.

Once golden, it will only take a few minutes, drain them 16 and transfer them to absorbent paper 17. Serve the cheese balls piping hot 18.

Storage

We recommend consuming the cheese balls immediately.

If you prefer to prepare the balls the day before, you can store them in the refrigerator and fry them before serving.

Advice

You can use aged cheeses of your choice such as Parmigiano Reggiano or Grana Padano.

The balls can also be flavored with chopped rosemary, dried or fresh oregano.
