Salmon fillets 2.2 lbs (1 kg) - (4 of 250 g each)
Bread 3.5 oz (100 g) - day-old
Parsley 1 tuft
Dill 1 tuft
Thyme 4 sprigs
Rosemary 2 sprigs
Lemon peel 1
Extra virgin olive oil 3 ½ tbsp (50 g)
Ground white pepper 1 tsp
Fine salt to taste

How to prepare Crispy Salmon

To make crispy salmon, first prepare the breadcrumb coating: cut the bread into pieces and put it in a food processor 1, then add the dill 2 and fresh thyme leaves 3.

Also add the rosemary needles 4 and parsley 5. Pour in the oil 6.

Then add the lemon zest 7, salt, and white pepper 8. Blend until you get a coarse consistency 9.

Now take care of the salmon fillets: remove the skin with a thin-bladed knife 10 and remove the bones using kitchen tweezers 11, then transfer the fillets to a baking sheet lined with parchment paper and cover them with the breadcrumb coating, pressing it well with your hands 12.
