The true gourmet touch is given by the orange puree, a citrus-scented concentrate that will give an intense flavor. The crunchy note will be provided by almond flakes and crumbled cantucci, which, along with dark chocolate chips, garnish these quick spoon desserts for the joy of those with a sweet tooth!

INGREDIENTS

- Mascarpone cheese 1 ½ cup (350 g)
- Sugar 0.4 cup (85 g)
- Water 3.4 tbsp (50 g)
- Egg yolks 3
- Vanilla bean 1
How to prepare Mascarpone and Orange Spoon Dessert
To prepare the mascarpone and orange spoon dessert, first pierce the orange with a knife 1: place it in a saucepan filled with water 2 and cook it until soft, turning it occasionally. This will take about 30-40 minutes. In the meantime, prepare the syrup: pour the water into a separate saucepan 3.
Add the sugar 4, stir 5, and bring the syrup to a temperature of 237°F-239°F, monitoring it with a kitchen thermometer 6.
When the syrup reaches 219°F, place the egg yolks in a bowl and start beating them with an electric whisk. Once it reaches temperature, pour the syrup in a thin stream while keeping the whisk running 7. Continue whisking until you get a light and fluffy mixture 8. Add a spoonful of the mixture to the mascarpone, which you have placed in a bowl, and stir to temper it 9.
Then add the rest and work with the electric whisk until you obtain a smooth cream 10. Flavor with the seeds of the vanilla bean 11 and blend again to infuse well 12.
Place the cream in the refrigerator for about 10 minutes 13. Retrieve the cooked orange 14 and blend it with an immersion blender 15.
You should obtain a smooth cream 16; if it turns out too thick, add some of the cooking water. Now take a dessert glass with a capacity of 8 oz and pipe a layer of mascarpone cream using a piping bag with a star tip 17. Using a piping bag without a tip and with a small hole, add dots of orange cream as desired 18.
Finish with chocolate chips 19 and roughly crumbled cantucci 20. Continue with another identical layer, starting with the mascarpone cream 21.
Continue with the orange cream and finish with chocolate, cantucci, and sliced almonds 23. The mascarpone and orange spoon dessert is ready to be enjoyed 24!
