Preparation

How to prepare Orange and Pistachio Bundt Cake

To make the orange bundt cake, first butter the bundt pan 1 and sprinkle the pistachio crumbs 2 until it is fully covered 3. Set aside and proceed to preparing the batter.

In a double boiler, place the whole eggs 4, yolks 5, and sugar 6.

Add the salt 7 and grated orange zest 8. Mix with a whisk while bringing the mixture to a temperature of 113°F 9.

Once it reaches the right temperature 10, remove the bowl from the double boiler and beat with electric mixers 11 until you achieve a frothy consistency 12.

At this point, incorporate the flour 13 and corn starch 14, gently stirring with a spatula 15.

Lastly, add the butter, which you have previously melted and allowed to cool slightly 16. Mix again to combine 17, then pour the batter into the pan and fill it up to three-quarters full 18.

Bake in a preheated static oven at 338°F for about 40 minutes 19. Check the baking with a toothpick, then remove from the oven and let it cool in the pan 20. Once slightly cooled, flip the bundt cake onto a serving plate and let it cool completely 21.

In the meantime, prepare the glaze: in a small bowl, mix the powdered sugar and orange juice 22, then add the grated orange zest 23 and whisk until you get a smooth and homogeneous mixture 24.

Brush the surface of the bundt cake with the glaze 25, then garnish with candied orange peel 26. Your orange bundt cake is ready to be served 27!

Storage

The orange bundt cake can be stored for 2 days at room temperature, covered with a dome.

Advice

If you prefer, you can skip covering the pan with pistachio crumbs and instead add them as decoration on the cake's surface.
