How to prepare Pasta with Radicchio and Gorgonzola

To prepare pasta with radicchio and gorgonzola, start by cutting off the hard part of the radicchio 1, then finely slice the rest and set aside 2. Coarsely chop the walnuts 3.

Place the walnuts in a non-stick pan 4 and toast them briefly 5, then set aside. Cook the pasta in boiling salted water 6, keeping it two minutes underdone.

Meanwhile, put the gorgonzola in the same pan as the walnuts 7, pour a ladle of pasta cooking water 8 and stir over low heat until completely melted 9.

Drain the pasta into the pan with the gorgonzola cream 10 and finish cooking it for a couple of minutes, adding a little water if necessary 11. Finally, add the radicchio 12.

Finish with the walnuts 13, pepper, and thyme 14. Plate and serve the pasta with radicchio and gorgonzola hot 15.
