INGREDIENTS

Ingredients for about 30 ricotta fritters
Cow's milk ricotta cheese 1 ⅓ cup (320 g)
Type 00 flour 1 ¾ cup (215 g)
Whole cane sugar ½ cup (100 g)
Powdered yeast for sweets 2.4 tsp (10 g)
Lemon peel 1 - to grate
For frying
Peanut seed oil 4 ¼ cups (1 l)

How to prepare Italian ricotta fritters

To make the ricotta fritters, pour the ricotta 1 and brown sugar into a bowl 2, then work with a spatula. Add the grated lemon zest 3.

Add the flour 4 and the baking powder 5 and mix again, then knead with your hands to obtain a compact and homogeneous mixture 6.

Take small portions of dough about 0.7 oz each and round them between the palms of your hands to form balls 7; with these quantities, you will get about 30-32 pieces. Place the balls on a tray lined with parchment paper and meanwhile heat the vegetable oil to a temperature of 320°F. Fry a few pieces at a time to prevent the oil temperature from dropping 8. Drain the fritters when they are beautifully golden, it will take about 4-5 minutes 9.

Storage
