INGREDIENTS
Carnaroli rice 1 ¾ cup (350 g)
Butter 3 ½ tbsp (50 g)
Onions 1 - small
Vegetable broth 2 cups (500 ml)
Champagne 3 glasses (500 ml)
Grana Padano PDO cheese 3.5 oz (100 g) - (to grate)

How to prepare Risotto with Champagne

To prepare the champagne risotto, place 2 tablespoons of butter in a saucepan 1, add the finely chopped onion 2 and let it turn golden; sprinkle in the rice 3 and toast it for a few moments over high heat, stirring with a wooden spoon.

Then pour all the Champagne into the saucepan 4; stir the rice continuously so that it doesn't stick to the bottom 5 and if necessary, add a few ladles of vegetable broth to finish cooking.
A few moments before the end of cooking, turn off the heat and stir in the remaining butter 6 and the Grana Padano DOP.
Serve the champagne risotto while still hot, accompanied by a flute of the same champagne used for cooking.
