Beef Onion Glaze with Homemade Potato Dumplings
INGREDIENTS
- For the Beef Onion Glaze:
- Beef: 250 g (8.8 oz)
- Salt, to taste
- Pepper, to taste
- Onions: 2 medium-sized
- Tomato paste: 1 teaspoon
- Demi-glace: 200 g (7 oz or approx. 3/4 cup)
- Bay leaf: 1
- For the Potato Dumplings:
- Potatoes: 500 g cooked and mashed (about 2 cups)
- Flour: 100 g (3.5 oz or about 3/4 cup)
- Egg yolk: 1
- Salt, to taste
- Nutmeg, a pinch
- Oil for frying
PROCEDURE
- Season the beef with salt, pepper, and oil. Massage well. Cook in a skillet on both sides until desired doneness. Set aside.
- Slice the onions and cook them in the same pan. Add the tomato paste and mix well. Then add the demi-glace, bay leaf, salt, and pepper, and return the beef to the pan to cook for a few more minutes.
- In a separate bowl, mix the mashed potatoes with an egg yolk, flour, and a pinch of nutmeg. Roll the dough out to create gnocchi-shaped pieces, but make them slightly elongated.
- Fry the potato dumplings in plenty of hot oil until golden brown.
- Serve the beef with the onion glaze and the potato dumplings on the side.
