Bell Pepper and Olive Pie
INGREDIENTS
Ingredients:
- 2 bell peppers
- 1 onion
- ¾ cup tomato sauce (200 ml)
- 7 oz ground meat (200 g)
- Salt and pepper to taste
- Oregano to taste
- 2 hard-boiled eggs
- ¾ cup feta cheese (3.5 oz or 100 g)
- Sliced green olives (to taste)
- Chopped parsley (to taste)
- 2 ½ cups all-purpose flour (300 g)
- ? cup water (150 ml)
- 3 ½ tbsp extra virgin olive oil (50 ml)
- Salt to taste
- 1 egg yolk
- 2 tbsp milk
INSTRUCTIONS
Filling Preparation:
- Cut the bell peppers and onion into small pieces.
- Sauté the onion in a pan with a bit of olive oil.
- Add the bell peppers and cook for a few minutes, then pour in the tomato sauce and let it cook.
- Add the ground meat, season with salt, pepper, and oregano. Cook until the meat is done, then set aside to cool.
- In a bowl, mix flour, water, extra virgin olive oil, and a pinch of salt. Knead until you get a smooth dough.
- Cover the dough and let it rest for one hour.
- Divide the dough into two parts. Roll out one half to create the base of the pie.
- Fill the base with the bell pepper and meat mixture.
- Add sliced hard-boiled eggs, crumbled feta, sliced green olives, and chopped parsley on top of the filling.
- Roll out the second half of the dough and place it over the filling, sealing the edges tightly.
- Brush the top with the egg yolk mixed with milk.
- Bake in a preheated oven at 365°F (185°C) for about 30 minutes, until golden and crispy on top.
