Bell Pepper and Olive Pie

INGREDIENTS

Ingredients:

  • 2 bell peppers
  • 1 onion
  • ¾ cup tomato sauce (200 ml)
  • 7 oz ground meat (200 g)
  • Salt and pepper to taste
  • Oregano to taste
  • 2 hard-boiled eggs
  • ¾ cup feta cheese (3.5 oz or 100 g)
  • Sliced green olives (to taste)
  • Chopped parsley (to taste)
For the dough:
  • 2 ½ cups all-purpose flour (300 g)
  • ? cup water (150 ml)
  • 3 ½ tbsp extra virgin olive oil (50 ml)
  • Salt to taste
For brushing:
  • 1 egg yolk
  • 2 tbsp milk

INSTRUCTIONS

Filling Preparation:

  • Cut the bell peppers and onion into small pieces.
  • Sauté the onion in a pan with a bit of olive oil.
  • Add the bell peppers and cook for a few minutes, then pour in the tomato sauce and let it cook.
  • Add the ground meat, season with salt, pepper, and oregano. Cook until the meat is done, then set aside to cool.
Dough Preparation:
  • In a bowl, mix flour, water, extra virgin olive oil, and a pinch of salt. Knead until you get a smooth dough.
  • Cover the dough and let it rest for one hour.
Assembly:
  • Divide the dough into two parts. Roll out one half to create the base of the pie.
  • Fill the base with the bell pepper and meat mixture.
  • Add sliced hard-boiled eggs, crumbled feta, sliced green olives, and chopped parsley on top of the filling.
  • Roll out the second half of the dough and place it over the filling, sealing the edges tightly.
Baking:
  • Brush the top with the egg yolk mixed with milk.
  • Bake in a preheated oven at 365°F (185°C) for about 30 minutes, until golden and crispy on top.
