Cook the black rice in plenty of salted water for 20 minutes. Clean the shrimp and cut them into chunks, clean the squid and slice them into rings, then sauté them on high heat for 3 minutes with a drizzle of olive oil, drain everything on a piece of paper towel. Slice the leek into rings and the broccoli into florets, cook the leeks in the fish cooking oil, add the broccoli, salt, pepper, pour in the cooking water from the mussels and clams, cover with a lid and cook for 5 minutes, remove the lid, add the drained black rice, the sautéed squid, shrimp, mussels, clams, a drizzle of raw olive oil and serve.
