Burrata, Tomato, and Basil Pesto Salad, with Toasted Pine Nuts

Ingredients

?      4 heirloom tomatoes

?      1 fresh burrata

?      3 ½ tablespoons (50 ml) extra virgin olive oil

?      1 bunch fresh basil

?      2 tablespoons pine nuts

?      Arugula

?      Balsamic vinegar

?      Salt

?      Pepper

Instructions

  1. Pesto: Blend the basil with olive oil, salt, and pepper.
  2. Tomatoes: Wash and slice the tomatoes.
  3. Pine Nuts: Toast the pine nuts in a pan until golden brown.
  4. Assembly: Arrange arugula and tomatoes on a plate, then add the burrata.
  5. Dressing: Drizzle with pesto, add olive oil, balsamic vinegar, salt, and pepper.
