Chicken Breast with Mashed Potatoes and Kale
Ingredients
For the Chicken Breast:
- 8.8 oz (250g) chicken breast
- Butter
- Thyme
- 1 clove of garlic
For the Mashed Potatoes:
- 4 potatoes
- 5 tablespoons (approx 2/3 cup) (150ml) milk
- 2 tablespoons (30g) butter
- Salt
For the Kale:
- 7 oz (200g) washed kale
- Garlic
- Olive oil
- Red pepper flakes
- Salt and pepper
Procedure

Chicken Breast:
- Sauté the chicken breast in a pan with a bit of butter for 5 minutes per side.
- Flavor with thyme and a clove of garlic.
- Transfer to the oven and cook at 195°F (90°C) for 15 minutes.

Mashed Potatoes:
- Bake the potatoes in a preheated oven at 355°F (180°C) for 40 minutes.
- Cut them in half and let them dry out a bit in the oven.
- Mash/press through a sieve and season with warm milk, butter, and salt.

Kale:
- Sauté the washed kale in a pan with garlic, olive oil, red pepper flakes, salt, and pepper until it becomes tender.
