Chicken Thighs with Herb Crust

Ingredients

  • Boneless, skinless chicken thighs: 4
  • White sandwich bread: 1 3/4 cups (200 g)
  • Chopped parsley: 1 bunch
  • Minced garlic: 2 cloves
  • Lemon zest: to taste
  • Extra virgin olive oil: 1/4 cup (4 tablespoons)
  • Salt: to taste
  • Ground black pepper: to taste

Instructions

  • Finely chop the garlic and parsley with a knife and mix them together.
  • Place the white sandwich bread in a food processor and blend until you get breadcrumbs. Transfer to a large bowl and add the garlic and parsley mixture along with the lemon zest.
  • Pour in the olive oil and season with salt. Mix well with your hands to combine all the ingredients.
  • Season the chicken thighs with olive oil, salt, and pepper, ensuring the seasoning covers the entire surface by massaging them with your hands.
  • Coat the chicken thighs in the breadcrumb mixture, ensuring they are fully covered on all sides.
  • Place the chicken thighs on a baking sheet lined with parchment paper and bake in a fan-assisted oven at 350°F (180°C) for 40 minutes. The chicken thighs with herb crust are ready to be served.
