Chicken and Avocado Piadina
Ingredients
- 200g chicken breast strips (7 oz)
- 1 tablespoon shichimi togarashi
- Oil
- 1 avocado, diced
- Half a lime
- 1 onion, diced (without pulp)
- 1 tomato, diced (without pulp)
- Half a red onion, finely chopped
- Chili pepper to taste
- Half a red bell pepper, julienned
- Half a yellow bell pepper, julienned
- Half a green bell pepper, julienned
- Half a white onion, julienned
- 50g mozzarella (1.75 oz)
- 1 piadina (flatbread)
Instructions
- Marinate the chicken with shichimi togarashi and a drizzle of oil for 30 minutes.
- Prepare the sauce by mixing the avocado, lime, onion, tomato, red onion, and chili pepper.
- Sauté the chicken for 5 minutes, remove it, and sauté the bell peppers and white onion for 10 minutes, then add the chicken back in.
- On a piadina, place half of the mozzarella, the chicken with vegetables, and the rest of the mozzarella. Fold and cook for 5 minutes.
- Serve the sandwich with the avocado sauce.
