Cod Croquettes

Ingredients

  • 1 ¼ cups of cod (300 g)
  • 1 cup of starchy potatoes (200 g)
  • 2 eggs
  • 1 cup of grated Parmigiano Reggiano (100 g)
  • 1 tablespoon of chopped parsley
  • Salt and pepper to taste
  • 2 bay leaves
  • Oil for frying

Instructions

  1. Prepare the Cod:

    • Soak the cod for 24-48 hours, changing the water several times.
    • Transfer the cod to a pot, cover with cold water, add a bit of pepper and the bay leaves.
    • Bring to a boil and simmer for about 20 minutes, or until the cod is tender.
    • Drain the cod, remove the skin and bones, and flake it until it reaches a breadcrumb-like consistency.
  2. Prepare the Potatoes:

    • Cook the potatoes in boiling water until tender.
    • Drain and mash the potatoes until smooth.
  3. Make the Dough:

    • In a large bowl, combine the flaked cod, mashed potatoes, eggs, Parmesan cheese, parsley, salt, and pepper.
    • Mix all the ingredients well until you get a homogeneous mixture.
  4. Form the Croquettes:

    • Take small portions of the mixture and shape them into balls or cylinders with your hands.
  5. Fry:

    • Heat plenty of oil in a pan.
    • Fry the croquettes until golden and crispy.
    • Drain on paper towels to remove excess oil.
