Cod Croquettes
Ingredients
- 1 ¼ cups of cod (300 g)
- 1 cup of starchy potatoes (200 g)
- 2 eggs
- 1 cup of grated Parmigiano Reggiano (100 g)
- 1 tablespoon of chopped parsley
- Salt and pepper to taste
- 2 bay leaves
- Oil for frying

Prepare the Cod:
- Soak the cod for 24-48 hours, changing the water several times.
- Transfer the cod to a pot, cover with cold water, add a bit of pepper and the bay leaves.
- Bring to a boil and simmer for about 20 minutes, or until the cod is tender.
- Drain the cod, remove the skin and bones, and flake it until it reaches a breadcrumb-like consistency.

Prepare the Potatoes:
- Cook the potatoes in boiling water until tender.
- Drain and mash the potatoes until smooth.

Make the Dough:
- In a large bowl, combine the flaked cod, mashed potatoes, eggs, Parmesan cheese, parsley, salt, and pepper.
- Mix all the ingredients well until you get a homogeneous mixture.

Form the Croquettes:
- Take small portions of the mixture and shape them into balls or cylinders with your hands.

Fry:
- Heat plenty of oil in a pan.
- Fry the croquettes until golden and crispy.
- Drain on paper towels to remove excess oil.
