Crêpes Suzette
Ingredients
For the Crêpes:
- 1 egg
- 1 cup milk (250 ml)
- 2 tablespoons melted butter (30 g)
- 2 tablespoons sugar (30 g)
- 1 cup flour (125 g)
- 3 oranges, segmented
- Juice of 3 oranges
- Zest of 1 orange, julienned
- 3 tablespoons sugar
- 1 tablespoon butter
- 3 tablespoons liqueur (optional)
Instructions
For the Crêpes:
- In a bowl, beat the egg with the milk.
- Add the melted butter and sugar, mixing well.
- Gradually incorporate the flour until you get a smooth, lump-free batter.
- Heat a non-stick pan and pour in a ladle of batter, spreading it evenly.
- Cook the crêpes on both sides until golden. Repeat until all the batter is used.
- In a pan, melt the butter and add the sugar, cooking until caramelized.
- Add the orange zest and let it infuse.
- Deglaze with the liqueur (optional).
- Add the orange juice and reduce slightly.
- Gently incorporate the orange segments and the crêpes into the sauce, mixing delicately.
