Ingredients

For the Crêpes:

  • 1 egg
  • 1 cup milk (250 ml)
  • 2 tablespoons melted butter (30 g)
  • 2 tablespoons sugar (30 g)
  • 1 cup flour (125 g)
For the Orange Sauce:
  • 3 oranges, segmented
  • Juice of 3 oranges
  • Zest of 1 orange, julienned
  • 3 tablespoons sugar
  • 1 tablespoon butter
  • 3 tablespoons liqueur (optional)

Instructions

For the Crêpes:

  • In a bowl, beat the egg with the milk.
  • Add the melted butter and sugar, mixing well.
  • Gradually incorporate the flour until you get a smooth, lump-free batter.
  • Heat a non-stick pan and pour in a ladle of batter, spreading it evenly.
  • Cook the crêpes on both sides until golden. Repeat until all the batter is used.
For the Orange Sauce:
  1. In a pan, melt the butter and add the sugar, cooking until caramelized.
  2. Add the orange zest and let it infuse.
  3. Deglaze with the liqueur (optional).
  4. Add the orange juice and reduce slightly.
  5. Gently incorporate the orange segments and the crêpes into the sauce, mixing delicately.
