Delicious Apple Fritters

Ingredients

  • 2 apples
  • Sunflower oil
  • 1 lemon
  • 1/3 cup sugar (80 g)
  • 2 1/2 cups all-purpose flour (300 g)
  • 3/4 cup milk (200 ml)
  • 2 tablespoons powdered sugar (20 g)
  • 2 eggs
  • A pinch of salt

Instructions

  • Separate the egg yolks from the whites. In a bowl, vigorously beat the egg yolks with the sugar and milk until you get a smooth mixture.
  • Incorporate the flour, a pinch of salt, and the grated lemon zest, mixing well.
  • Peel the apples, finely grate them, and add them to the batter, mixing thoroughly.
  • Beat the egg whites until stiff peaks form and gently fold them into the batter, mixing from bottom to top to keep the mixture airy.
  • Heat the sunflower oil for about 4-5 minutes. To check if it's ready, insert a wooden skewer: if bubbles form around it, the oil is at the right temperature.
  • Using two spoons, scoop some batter and form quenelles, frying them in hot oil for a few minutes until golden and crispy.
  • Once cooked, drain the fritters with a slotted spoon and serve them hot, dusted with powdered sugar and cinnamon.
