Fluffy Apple Cake with Vanilla Foam
INGREDIENTS
For the Cake:
- 3 apples
- 3 eggs
- 180 ml milk (approx. 3/4 cup)
- 150 g sugar (approx. 3/4 cup)
- A pinch of salt
- 300 g flour (approx. 2 2/3 cups)
- 80 g melted butter (approx. 1/3 cup)
- 10 g baking powder (approx. 1 tbsp)
- 1/2 teaspoon cinnamon
- Vanilla extract
- Zest of one lemon
- Juice of one lemon
For the Vanilla Foam:
- 200 ml fresh cream (approx. 3/4 cup)
- 200 ml milk (approx. 3/4 cup)
- 1/2 teaspoon vanilla extract
- 4 egg yolks
- 60 g sugar (approx. 1/3 cup)
- A pinch of cinnamon powder
PROCEDURE
Dice the apples. In a bowl, break 3 eggs and add sugar and a pinch of salt. Mix and then add milk, lemon zest, melted butter, vanilla, cinnamon, baking powder, and sift in the flour. Add the apple dices and lemon juice to the mixture. Stir and pour into a baking dish. Bake at 175°C (350°F) in a convection oven for 25 minutes.
For the foam: mix egg yolks with sugar and cinnamon. Then add cream, milk, and vanilla. Place the bowl over a pot of boiling water and cook in a bain-marie until the mixture reaches 82°C (180°F). Combine cream, milk, and vanilla and bring to a boil. Transfer the hot cream to a siphon, let it cool, and serve.
