Homemade Hamburger

Ingredients

Hamburger Buns:

  • 4 cups all-purpose flour (500 g)
  • 1 cup mashed boiled potatoes (7 oz)
  • 3 egg yolks
  • 3/4 cup milk (7 oz)
  • 2 teaspoons salt (0.35 oz)
  • 1/4 cup butter (2 oz)
  • 2 tablespoons fresh yeast (0.88 oz)
  • 2 tablespoons sugar (1 oz)

Caramelized Onions:

  • 1 large onion
  • Olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon muscovado sugar

Hamburger Sauce:

  • 3 1/2 tablespoons mayonnaise (1.7 oz)
  • 3 tablespoons ketchup (1.4 oz)
  • 2 tablespoons sweet and sour sauce (1 oz)
  • 1 tablespoon porcini mushroom powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

• Hamburger Buns:

  1. Dissolve the yeast in 1/2 cup warm milk (3.5 oz) with the sugar. Let it rest for 10-15 minutes until it forms a foam on the surface.
  2. In a large bowl, mix the flour with the mashed potatoes. Add the egg yolks, remaining milk, and dissolved yeast. Begin kneading until a homogeneous mixture is obtained.
  3. Add the softened butter and salt. Continue kneading until the dough becomes smooth and elastic (about 10-15 minutes by hand or 5-7 minutes with a mixer).
  4. Cover the bowl with a cloth and let it rise in a warm place for about 1-2 hours or until the dough doubles in volume.
  5. Divide the dough into 8-10 pieces, form balls, and slightly flatten them. Place them on a baking sheet lined with parchment paper.
  6. Cover and let rise again for 30-45 minutes.
  7. Brush the surface of the buns with a mixture of egg and milk.
  8. Bake in a preheated oven at 350°F (180°C) for 15-20 minutes until golden brown.

• Caramelized Onions:

  1. Slice the onion into julienne strips.
  2. Heat some olive oil in a pan. Add the onions and cook on low heat.
  3. Add salt, pepper, and muscovado sugar. Continue cooking slowly for about 20 minutes, stirring occasionally until the onions are caramelized.

• Sauce: Mix all the ingredients in a bowl until a smooth sauce is obtained.

• Assembling the Hamburger:

  1. Cook the Meat Patties: Cook the meat patties in a pan until well done. You can add a slice of cheese on top of each patty during the last minute of cooking.
  2. Assemble: Cut the buns in half and lightly toast them in a pan. Spread the sauce on the base of the bun, add a patty with cheese, then the caramelized onions, another layer of sauce, and close with the top half of the bun.
