Orange Brûlée
Ingredients
- 100 ml (6 2/3 tbsps) of orange juice
- 1 egg
- 4 egg yolks
- 30 g (2 1/2 tbsps) of sugar
- 40 g (1.4 oz) of cold butter
- 70 g (2.5 oz) of white chocolate
Procedure
Cut an orange in half and scoop out the inside.
Separately, blend the pulp of the oranges and strain to remove fibrous parts. In a saucepan, heat the orange juice, egg, egg yolks, and sugar until it reaches 82°C / 180°F.
Once the desired temperature is reached, add the cold butter and thef white chocolate.
Blend the mixture until it becomes creamy in texture.
Fill the hollowed-out oranges with the creamy mixture and let it cool completely.
Before serving, dust with sugar and caramelize to your liking. Enjoy your creamy orange dessert!
