Shrimp in Cocktail Sauce

Ingredients

For 4 servings:

For the shrimp:

  • 14 oz small pink shrimp (400g)
  • Salt, to taste
  • Pepper, to taste

For the sauce:

  • 3/4 cup mayonnaise (200g)
  • 2 tablespoons plain yogurt
  • 1 teaspoon mustard
  • 1 tablespoon ketchup
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh chives, for garnish

For the salad:

  • 1 head of lettuce
  • 1 medium head of radicchio

Instructions

  • Prepare the shrimp:
    Clean the shrimp by removing the heads, shells, and tails. Use a knife to make a small incision along the back to remove the intestinal vein. Rinse the shrimp under cold running water.

  • Bring a pot of salted water to a boil. Add the shrimp and cook for 2 minutes, until they turn pink. Drain the shrimp and cool them under cold water.

  • Make the cocktail sauce:
    In a bowl, mix the mayonnaise, yogurt, mustard, ketchup, and lemon juice until smooth. Season with salt and pepper to taste.

  • Prepare the salad:
    Wash and dry the lettuce and radicchio. Arrange a bed of the greens on serving plates.

  • Assemble the dish:
    Toss the shrimp with the cocktail sauce and place them on top of the salad. Garnish with fresh chives.

  • Serve immediately.
