Shrimp in Cocktail Sauce
Ingredients
For 4 servings:
For the shrimp:
- 14 oz small pink shrimp (400g)
- Salt, to taste
- Pepper, to taste
For the sauce:
- 3/4 cup mayonnaise (200g)
- 2 tablespoons plain yogurt
- 1 teaspoon mustard
- 1 tablespoon ketchup
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh chives, for garnish
For the salad:
- 1 head of lettuce
- 1 medium head of radicchio

Prepare the shrimp:
Clean the shrimp by removing the heads, shells, and tails. Use a knife to make a small incision along the back to remove the intestinal vein. Rinse the shrimp under cold running water. -
Bring a pot of salted water to a boil. Add the shrimp and cook for 2 minutes, until they turn pink. Drain the shrimp and cool them under cold water.

Make the cocktail sauce:
In a bowl, mix the mayonnaise, yogurt, mustard, ketchup, and lemon juice until smooth. Season with salt and pepper to taste. -
Prepare the salad:
Wash and dry the lettuce and radicchio. Arrange a bed of the greens on serving plates. -
Assemble the dish:
Toss the shrimp with the cocktail sauce and place them on top of the salad. Garnish with fresh chives. -
Serve immediately.
