Stuffed Veal Sirloin with Apples
ingredients
- 1/2 leek
- 1 tablespoon of butter
- 3 diced apples
- 1 tablespoon of white sultana raisins
- 1 tablespoon of black sultana raisins
- Salt and pepper to taste
- 1 tablespoon of fresh thyme
- 2.2 lbs (1 kg) of veal sirloin
- Olive oil
- Salt and pepper to taste
Procedure
For the Filling:
- Sauté the leek with butter.
- Add diced apples, white and black sultana raisins, salt, pepper, and thyme.
- Cook for 5 minutes and let it cool.
For the Veal:
- Open and flatten the veal sirloin. Season the meat with salt.
- Fill it with the apple filling and tie it with twine.
- Sear in a pan with olive oil for 5 minutes on each side.
- Roast in the oven at 150°C (300°F) for 20 minutes.
For the Side Dish:
- Cut a squash in half.
- Season with thyme, salt, pepper, olive oil, and 2 cloves of garlic.
- Cover with parchment paper and bake at 180°C (350°F) for 40 minutes.
- In a saucepan, add cubes of butter, a tablespoon of milk, a pinch of salt. Mix well.
Serve the Stuffed Veal Sirloin with Apples accompanied by the seasoned squash as a side dish. Enjoy your meal!
