Stuffed Veal Sirloin with Apples

  • 1/2 leek
  • 1 tablespoon of butter
  • 3 diced apples
  • 1 tablespoon of white sultana raisins
  • 1 tablespoon of black sultana raisins
  • Salt and pepper to taste
  • 1 tablespoon of fresh thyme
  • 2.2 lbs (1 kg) of veal sirloin
  • Olive oil
  • Salt and pepper to taste

Procedure

For the Filling:

  1. Sauté the leek with butter.
  2. Add diced apples, white and black sultana raisins, salt, pepper, and thyme.
  3. Cook for 5 minutes and let it cool.

For the Veal:

  1. Open and flatten the veal sirloin. Season the meat with salt.
  2. Fill it with the apple filling and tie it with twine.
  3. Sear in a pan with olive oil for 5 minutes on each side.
  4. Roast in the oven at 150°C (300°F) for 20 minutes.

For the Side Dish:

  1. Cut a squash in half.
  2. Season with thyme, salt, pepper, olive oil, and 2 cloves of garlic.
  3. Cover with parchment paper and bake at 180°C (350°F) for 40 minutes.
  4. In a saucepan, add cubes of butter, a tablespoon of milk, a pinch of salt. Mix well.

Serve the Stuffed Veal Sirloin with Apples accompanied by the seasoned squash as a side dish. Enjoy your meal!
