Veal Fillet in a Sesame Crust with Potato and Beetroot Mash
Ingredients
- 250g veal fillet
- 20g butter
- Salt, pepper
- Marjoram
- Sage
- Mixed sesame seeds, to taste
- For the mashed potatoes:
- 1 kg boiled potatoes
- 150g cooked red beets
- 50ml warm milk
- 20g butter
- 50g Parmesan cheese
- Salt, pepper
Procedure
Take a veal fillet and cut a 250g portion. Season it with salt and sear it in a pan with garlic, butter, marjoram, and sage until it's browned on all sides (about 5 minutes per side).
Once cooked, brush it lightly with some mustard and coat it in the mixed sesame seeds.
For the mashed potatoes: Mash the boiled potatoes in a bowl. Boil the red beets until soft, puree them until smooth, and then combine with the mashed potatoes.
Add salt, butter, warm milk, and Parmesan cheese to achieve a creamy consistency.
Plate and serve!
