Denny Imbroisi
Denny Imbroisi is the Italian chef who is taking Paris and France by storm. Originally from Calabria, he moved to Mantua after his parents separated and studied to become a chef. He began working in renowned Michelin-starred restaurants, such as Perbellini in Isola Rizza and San Domenico in Imola. Then, he had an idea: to go far away to represent Italy in the world. His desire to travel first took him to the French Riviera, to the Mirazur restaurant of two-Michelin-star chef Mauro Colagreco, and then to Paris to William Ledeuil's Ze Kitchen Galerie. His breakthrough came when he met Alain Ducasse, one of the most important chefs in the world, who entrusted him with leading his prestigious restaurant on the Eiffel Tower, Le Jules Verne. Denny Imbroisi reached the quarterfinals of the TV show Top Chef France, a participation that made him famous to the general public. Today, he owns two restaurants in Paris, Epoca and Ida, named after his sister. His cuisine is inspired by Italian flavors and ingredients: his signature dish is gourmet Carbonara made with Benedetto Cavalieri Spaghettoni, raw egg yolk, paper-thin slices of guanciale, Grana Padano Riserva aged over 20 months, breadcrumbs, and wild black pepper. The prestigious newspaper Le Figaro and the French press have crowned him one of the best Italian chefs in France.
