The environment in which we are born and raised greatly influences our character and inclinations. This is especially true when one is born into beautiful and good stories, like in the case of Michelin-starred chef Viviana Varese. With roots in Campania, it was thanks to her family's seafood restaurant that she developed her interest and love for cooking, a passion that led her, from a very young age, to work in some of the world's most important establishments, from Albereta in Erbusco (BS) to El Celler De Can Roca in Girona. Born in 1974, Viviana Varese opened the Alice restaurant in Milan in 2007, which was moved in 2015 to the top floor of Eataly-Milano. Today, this venture has transformed into VIVA, the latest creation of Viviana Varese, where guests can always enjoy a cuisine vibrant with harmony, color, and indeed, life, with a menu ranging from meat to fish, with a strong plant-based component.
